Start working as an Independent Chef for a five-star hotel! Work in a Japanese restaurant where craftsmanship and refinement are key.

What are you going to do:

An international five-star hotel, is looking for an Independent Working Chef for its prestigious Japanese restaurants. These restaurants are part of the absolute top segment of gastronomy and offer a unique culinary experience to our demanding guests. In this role, you will work in an environment where excellence is the norm. Our Japanese restaurants are known for their refined dishes, exquisite ingredients, and impeccable service.

As an Independent Working Chef, you are responsible for (technically) overseeing and preparing dishes and the operational conditions related to this (inventory management and ordering from mainly fixed suppliers). The independent working chef provides input regarding the composition and modification of the menus, card, and methods. You will be reporting to your supervisor.

We are continuously looking for talented chefs!

You will be responsible for:

  • Following regulations (HACCP, Arbo, safety, etc.);
  • Following (work) instructions (recipes, etc.);
  • Following planning;
  • Efficiency of the kitchen process;
  • Quality of preparation (guest satisfaction);
  • Sufficient stock;
  • Timely orders;
  • Proper storage of items;
  • Following the FIFO principle;
  • Following planning/schedule;
  • Following (safety) regulations;
  • Timely/accurate accountability of usage;
  • Number of proposals submitted;
  • Uniform application of instructions;
  • Number of adopted proposals.

Work is performed 5 days per week, 7.6 hours per day, with hours from 16:00 until the restaurant's closing time. You are also available to work on holidays.


What we offer:
  • Contract: 1 year, with possibility of extension;
  • Salary: Group 4, see the salary range for more information;
  • Bonus: 1 week's salary when the hotel reaches its budgeted GOP (Gross Operating Profit) and you achieve a minimum overall score of successful in your annual evaluation;
  • 8% holiday allowance (pro rata);
  • 25 vacation days per year (pro rata);
  • Compensation for national holidays;
  • Hospitality CBA applies;
  • General Pension scheme for Hospitality and Catering;
  • General Survivors' pension;
  • Attractive family and friends rates on overnight stays at Hotel Okura Amsterdam;
  • Once a year staff discount in one of the restaurants (50%);
  • Staff discount in our restaurants (20%);
  • Travel allowance from 10 km (one way);
  • Study budget of €1,000;
  • After passing the probation period, you receive a complimentary overnight stay with breakfast (2 persons), so you can experience the hotel as a guest!
What we ask:
  • Minimum mbo level or equivalent ability level 3 or higher;
  • Proficiency in Dutch or English;
  • Knowledge of the entire kitchen process;
  • You can coach/instruct: shows interest in others and what occupies them; knows how to motivate and enthuse; gives confidence and space to do something independently and make mistakes; shows exemplary behaviour to others;
  • You can take initiative: starts on your own, doesn't wait; has confidence in own abilities and quality; looks ahead in your own work and takes action when necessary; sees when things (also outside your own work) are left undone and picks them up;
  • You are quality-oriented: corrects immediately if requirements are not met; asks for feedback from guests about quality and service; comes up with proposals to improve things;
  • You are stress-resistant: remains calm/composed under difficult circumstances or high work pressure; recovers quickly after setbacks or disappointments; continues to work goal-oriented even under pressure.
